Zero Waste I Köket
Karin Bohlin
In Sweden we waste approximately 19 kg of food per person every year – and pour out 26 kg liquid food down the drain. At the same time many falsely believe that they don’t waste any food at all. A lot of the food is forgotten in the back of the fridge and eventually goes bad. Food production is a strain on the environment, and because more food is produced than eaten, the waste is cause of a meaningless use of our resources. By minimizing the food waste, the energy used in production and emissions caused would decrease, giving earth a chance to be a home for future generations as well.
The high pace of society with increasingly higher expectations mean that households today often lack time and confidence to engage in planning and cooking. This book helps you make use of crumbs and end bits. In a simple and inviting way the book guides you in how to adopt a mind-set that helps the environment. For example, a broccoli that has started turning yellow decides that your next meal will be a wok, while a few decilitres of left over yoghurt sauce from yesterday inspires a burger today. With new tricks the author hopes to help you improve your ability to store food correctly to make it last longer, as well as inspire change and increase your love for food. Swedish text.
